Vegan TikTok “Feta” Pasta

Ingredients:

12-16 oz box of rigatoni pasta

14-16 oz box of firm tofu

1/2 cup raw cashews

2 cups of water

3 tablespoons nutritional yeast

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon salt

2.5 cups cherry tomatoes

Handful of whole garlic cloves

Zest and juice of 1 lemon

Olive oil for drizzling

Pepper to taste

*Optional crushed red pepper flakes


Directions:

1. Boil cashews in 2 cups of water for 30 minutes.

2. Preheat oven to 400 F.

3. Add boiled cashews, tofu, nutritional yeast, garlic powder, onion powder and salt to a high speed blender. Blender for 2-3 mins until smooth and creamy. Add water by the tbsp if needed.

4. Place tofu mixture in the center of a deep baking dish. Place cherry tomatoes and garlic around the tofu mixture and drizzle everything with olive oil. You can add more salt and pepper if desired.

5. Place in the oven to cook for 40 mins or until tomatoes are bursting open. Cook pasta per instructions while tofu is in the oven.

6. When pasta is done, strain and drizzle with olive oil to prevent noodles from sticking.

7. When tofu is done, mix cooked pasta into the baking dish until combined. Add zest and juice of 1 lemon and mix well. You can add red pepper flakes if desired.
