Thai Noodle Salad

Ingredients:

6-8oz package of rice noodles

4 cups shredded purple cabbage

1 cup shredded carrots

1/2 cup diced cucumber

1 sliced red bell pepper

1/2 cup cilantro

3 chopped scallions

1/2 cup unsalted peanuts crushed

2 limes

2 boxes of Quorn Vegan Meatless Spicy Patties

- Peanut Sauce -

3/4 cup creamy peanut butter

1/4 cup rice vinegar

1/3 cup soy sauce

4 tablespoons of agave

1/2 teaspoon grated ginger

1 garlic clove minced

1/4 teaspoon red pepper flakes

2 tablespoons of water

Instructions:

  1. Cook rice noodles per instructions. This is optional: toss lightly with sesame oil when the noodles are done cooking to prevent them from sticking. Set aside.

  2. Cook the Quorn Meatless Spicy Patties and set aside.

  3. Combine all peanut sauce ingredients. Mix well.

  4. In a large bowl or platter, toss the rice noodles with the peanut sauce so that all the noodles are coated.

  5. Add in the cabbage, carrots, red bell pepper, cucumber and scallions to the bowl. Mix well.

  6. Top the salad with chopped Meatless Patties, cilantro, crushed peanuts and lime juice. You can add extra red pepper flakes if you’d like!

  7. Serve and enjoy!
